I can't answer you this question to well, but this might help. I have been to Brasil before and in Brasil sometimes it is impossible to tell who isn't mixed and who is. I have met Brasilian families with a nordic father and daughter, and a indigineous mother and son. But like in some Latin American countries, there i small concentrations of European types spread out.
In Brasil, if you go to the southern regions, it is very different than the north. Most people in that area are descendants of German,Portguese,Spanish,Ukranian and Italian immigrants.

I am not sure. I know they reside in the southern regions of the country, and I know there is a city with a monument directed at the Ukranian immigrants and their contributions to the country.

By percentage Argentina and Uruguay are indeed the most white-European countries of Southern America.
Though if looking in the faces of both, in some documentaries, I see an Indian admixture from time to time, more often than the percentage would say, but still I would say those Argentinians living there longer than 2 generations are 90 + percent European descendents. Brazil is so mixed, its hard to determine, but as others already pointed out, the South, the rather temperate region, is pred. white, almost like Argentina.

There has been quite a lot of varied European migration to Argentina. If you've seen people who could pass for Germanics or Slavs, there may well have Germanic or Slavic admixture.

from what I remember, I read a census a bit ago and they said that 70% of Argentinians claim Italian ancestry. So it can be that they have an Italian/Spanish name, but have a Germanic/Slavic mother/grandmother/grandfather,etc
