Teewurst

Teewurst is a German sausage made from two parts of raw pork (and sometimes beef) and one part bacon, which are minced, seasoned and packed in casings (mostly porous artificial casings) before being smoked over beech wood. The sausage then has to mature for seven to ten days in order to develop its typical taste. Teewurst contains 30 to 40 percent fat, which makes it particularly easy to spread.

Teewurst was invented in Pomerania, probably in the small Baltic town of Rügenwalde (now Darłowo in Poland), in the middle of the 19th century. The name, which means tea sausage, is said to derive from the habit of serving sandwiches at teatime.

I'm generally not a huge fan of pork. But sausages and black pudding are pure childhood nostalgia for me.

Well my father apparently hates it because he was fed it so much by his mum (who apparently homemade it.. ,-, i wish i could have had iiit)

One of the jewels of the gastronomy of Castille, the cochinillo or baby-suckling pork. Cooked on wood in traditional ovens.



In the City of Segovia the best cooker of this dish achieves the official rank of Mesonero Mayor de Castilla (Grand Innkeeper of Castille), which is granted by the Royal House. And each town which has the status of villa real (royal village) has its own mesonero mayor.

The skin crusty and the meat so tender, to demonstrate it they will cut it in front of you with a plate (the tradition dates back to 1884).



There is a statue in the city dedicated to these mesoneros mayores (I gather it must be after Cándido [picture above], who made a big name in Spain).

White ones and black ones. The black ones are comparable to English blood pudding I guess. The white ones are basically the same recipe, without the blood.

The name varies a lot from region to region in Flanders, the recipe is also different in different places.

My grandfather makes the black ones himself. Every year we slaughter a pig together.

Best sausage I had was made in Finland. I had it grilled. It was 92% pork meat. Very good food!

The best sausage I've had was with mash and peas. English sausages from the co op by my nan's.
