Pork with Fruits

I made this for my friend as a congratulations. I sort of made it up as I went along so maybe the proportions aren't so good in regards to the sugar/beef broth, but basically the sauce just needs to thicken up while it is cooking.

Ingredients


1 largeish orange
1 regular (??) pear
250g brown or golden caster sugar + a little extra
250ml beef broth
500g pork tenderloin

Preheat the oven to 350F, 180C, Gas Mark 4

1. Trim the fat off of the pork. Place it in a roasting tin that is approximately 2cm deep (more is fine, less is not so good).
2. Cut the pear and place it in the pan, over the pork and around it.
3. Peel the orange and squeeze the juice out of each piece and then put them in the pan with the pear.
4. Heat the beef broth with the sugar in a pan until the sugar has all dissolved.
5. Place this over the pork. Add a little extra sugar on top of the pork and around it.
6. Put it in the oven for 30-35 minutes, basting frequently with the sauce.
7. Test it with a thermometer (it should be around 150C-160C) or cut it open to reveal the colour of the meat.
8. Slice and serve with vegetables and the sauce poured on top.

Notes
I'm not exactly sure how much sugar/broth I used but it was roughly more sugar than broth. I did it by eye. ><
Broccoli goes well with this.

I had pork with fruits before. yours sounds good.
