Yes, there were several uprisings but all in all Gaul was taken over quasi overnight. Surely it does not help that Caesar is thought of having killed during his campaigns well over a million gauls, not counting the scores sold of in slavery.

The Empire of the Gauls does not really count since an important part of it was even roman citizens and roman legions that defected. More or less like a Southamerican area revolting against Spain during the Napoleonic occupation. It was not a return to a Peruvian Empire but a Criollo power grab. The Gaulish Empire was never really Gaulish to begin with.
