Gallo-Romain is Gallo-Roman, like it was Britano-Roman or Hispano-Roman. Not necessarily the same as a presumed meta-ethnicity (based merely on language origins) of Romance, where others like Romanians are also dumped in.
An acknowledgement of early assimilation of Romanitas by different non Helleno-Roman native peoples. The use of Thraco-Romans for Romanians, for example, are a late adoption of this concept.
