Two reasons why the US and EU push so hard for Kosovar independence are:

1) It is a way to show the Muslim world they are fighting on their side in one region while they abuse and attack them in Palestine, Lebanon, Iraq and Afghanistan.

2) It is a way to force submission on the "rogue state" of Serbia to teach everyone who's boss.

The US/EU are essentially trying to buy favour in the Muslim world by giving away what does not belong to them. Similarly they want to give away European jobs and security in order to strengthen the alliance with Turkey.
